What do you look for in a new hire?

    This is a great question as the generations of people coming into kitchens are so different than the ones who are running them. We have to adjust our way of speaking to this new generations of cooks. In a new hire I look at their work ethic, can they take criticism, can they work under pressure and most of all are they willing to learn. We are ambassadors of our craft and it is up to us to pass it down to the next generation, but finding the ones who are receptive is the problem, so it does take some patience to find the right ones.
